Finally tried the new IPA tonight. Flavor is not bad. I actually liked it better before the dry hopping though. If I try this again I'll probably skip that step. It didn't carbonate very well though, not sure why.

Carbonation is tricky. I have had a very flat batch.

So you tried it before dry hopping and carbonating? I had a maple pecan tonight. Maple flavor is good. Pecan is a little lacking. Hoping that taste comes out more with age. It's the first porter I've done so that's neat.

I usually try it whenever I take a gravity reading. Obviously will not be carbonated at that time but it gives a little indication of what the flavor will be like.

Brewed an orange weissbier tonight. Zested the oranges myself. Smells really good. My OG was a bit lower than the recipe and I have no idea how because I actually used more extract than it called for. My OG was 1.045

Tastes pretty wheaty, I would have liked a bit more orange flavor but it's definitely there. We'll see how it is once bottled.

Spring time I brewed at "tylersux" and we each took a case of bottles. Didn't have time this summer. Once my garage is organized I would like to get the beer and jerky stuff out. That is probably late winter though

Checked this morning and it's at 1.045 which is still way higher than the target FG. That puts the ABV at 9.4% right now. I'll transfer to secondary this weekend and see where it is before I add the bourbon and vanilla and wood chips.

Smells very good. Taste isn't quite right yet but will change quite a bit before its bottled.

Checked again tonight and it's down to 1.040. Gonna see if it goes down anymore and hopefully transfer this weekend.
